    I don’t understand it very well, what is the reason of excess protein?

      She’s saying that when you feed excess protein, it causes stress on the kidneys and other organs. More is not necessarily better in the case of protein and also some other nutrients. Most horses get all the protein they need from good quality hay or pasture.
